Processing detail: Both SL34 and Yellow Bourbon varieties undergo identical processing methods, yet they are treated separately. After being pre-dried for 2 days using a drum dryer, they experience a 5-day semi-anaerobic fermentation within uncompleted-sealed containers around 24°C. Drying is completed through 20 days of solar drying and followed by an extra 8-hour drum drying at 45°C. Stored at room temperature. Located in Gukeng Township of Yunlin County, Hua Xi Tian Manor Café cultivates Yellow Bourbon, Geisha, and SL-34. Due to its orientation, the farm enjoys only 6 hours of direct sunlight per day. Owner Tsung-Lin Hsieh, whose main job is working as a hydraulic excavator operator, began growing coffee in 2015 with the Taiwanese government. Due to heavy rainfall at his farm, Hsieh uses a coffee dryer to control his drying rate and prevent over-fermentation.
